I don't know exactly, but make it look less boring, make it look more funky (it's not my profession to create plugin guis btw).
I mean when I think of a Wurlitzer, tge mzsic with Wurlitzer makes me wanna dance, I get good vibes.
The color grey stands for getting old, useless, lifeless, unattractive, boring etc
That's what I associate with the color.
Now I could tell you what gui I like a lot, it is Avenger, but I am sure not everybody likes it and Avenger as a synth is a bit more complex than "just" a Wurlitzer.
Avenger doesn't necessarily needs to look funky, but rather premium, I expect a Wurlitzer plugin to look funky, though
and most other devs don't offer an exciting Rhodes or Wurlitzer gui, too.
There's obviously a lack of creativity amongst a lot of plugin devs.

Create something new. Maybe make the gui color change.
There are low keys and there a higher keys on the keyboard, there are white keys and black keys. Maybe develop some color changing feature depending how many white or black keys, high or low keys are pressed - based or triggered by percentage %. The lower the blacker, from black to grey to blue to red (highest notes). More white keys make the color more shiney, more black keys add vintage color look or whatever.
So the color chanfes to your playing.
Or maybe some special color effect for fast snd slow playing.

You asked for ideas, that's my spontaneous idea.
